Waking up this morning I craved pancakes like I never craved anything. On the other hand, I wanted to eat something healthy and pancakes are by far (far, far and far) not healthy. Apart from those banana-egg-pancakes but I never get them right! I always end up with black clumps that resemble a brick and the loud, annoying beeping of the fire alarm in my kitchen. I tried them three times – after that I gave up.
Today I googled a lot, and FINALLY I found the perfect healthy pancakes recipe (thank god!). They’re delicious, I promise. And they’re easy to make, I promise! Also, you won’t have to eat many of them because they are really, really filling. I got the original recipe from foodologie. Feel free to check out her blog as well! She’s got amazing recipes for people that want live healthily but have a constant desire for cake (that’s exactly me).
WHAT YOU NEED
2 tbsp. of spelt flour ( I used normal one)
2 tbsp. of almond meal
3 tbsp. of protein powder (I used Chocolate Protein)
1/2 tsp. of baking powder
a pinch of salt
1/2 tsp. of chia seeds
1 tbsp. of shredded unsweetened coconut
2-4 tbsp. of coconut milk
WHAT DO TO
Now comes the easy part. Just add all the dry ingredients first and the combine them with the wet ingredients.
Tip: Pour the coconut milk in tablespoon after tablespoon, so it won’t get too runny. You want to have a creamy mixture.
Then you need a coated pan to make the pancakes. Take two spoons full of batter and place them on the already heated up pan. When they start to bubble on the top – flip them around.
Finally – the fun part! You can add any toppings you like but I chose strawberries, bilberries, and fat free Greek yogurt. And to make them look really pretty I also sprinkled a few coconut shreds on top of everything.
