What do you do when you not only have to write a seminar paper but you have to study as well?
Right, you bake! And what isn’t more Autumn inspired than ‘Apple-Crumble Cupcakes’? I got the idea from Zoella (you can watch her video here) but gave it a little twist. Instead of adding the apples right to the batter, I made an apple-pie filling and put that into the cupcakes after they were done baking. So delicious!
What You Need
For the Cupcakes
230g Plain Flour
125g Unsalted Butter at Room Temperature
2 tsps Baking Powder
1 tsp Ground Cinnamon
1/2 tsp Salt
For the Apple Pie Filling
1 really big apple (or two smaller ones)
Brown Sugar (depends on how sweet you like it)
Cinnamon (depends on how cinnamon-ny you like it)
Lemon Juice of 1 Lemon
For the Crumble
75g Golden Caster Sugar
100g Salted Chilled Butter
140g Self-Raising Flour
1 tsp Vanilla Extract
1/4 tsp Ground Cinnamon
For the Icing
Soy Yoghurt (or any other kind)
What You Have To Do
First of all you will have to cut up your apples into tiny squares, so they will fit into the hole of the cupcake later on. Then put the apple squares, the lemon juice, the sugar and the cinnamon into a hot pot and let it simmer on low heat. During this time you have to taste test all the time (great right?) because you have to know if you still need to add sugar or cinnamon. When the sugar is caramelised and the texture is sticky but still a little bit runny, you’re done with your filling! Just fill it into a glass jar and put it in the fridge in the meantime, so it can cool down.
As for the cupcakes, you will have to mix your butter and your sugar until it’s a creamy and fluffy consistency. Then you can add the eggs – mix again until well combined.
Now you will have to add all of the dry ingredients, namely flour, cinnamon, baking powder and salt – mix until everything is combined.
Put it in the oven and when a tooth stick comes out clean, they’re done!
For the crumble you only need to mix your golden caster sugar, chilled butter, self-raising flour, vanilla extract and cinnamon with your hands, until it’s crumbly. Yes, it’s as easy as that! Put it in the oven until it’s golden brown on top.
Because everything already was so sugary I didn’t want to put buttercream on top of all that like Zoella did. That’s why I decided to just mix soy yoghurt, a little bit of sugar and cinnamon until I liked the taste.
The fun part always comes at the end and that’s decorating your cupcakes. You’ll need to do a little bit of fiddling now because you will have to cut a hole in the middle of every single one of your cupcakes, so you can stuff them with your apple pie filling. After you’ve done that you’ll only have to put the top back on, cover them with the soy yoghurt glaze and sprinkle the crumble on top!
